TRAINING CONTENTS

With Professional Sugar Art Pastry training program, students will become an internationally qualified boutique baker who can make cake using candy dough, cookies, cupcakes, cake pop, cartoon character figures, basic, elementary or advanced level human figures, working in hotels or restaurants. This training program has 2 parts; Professional Sugar Art Pastry and Advanced Sugar Art Pastry.

Certification

The students who successfully passed the written and practical exams at the end of the Boutique Bakery Programs will be awarded a Certificate in Professional Sugar Art Pastry approved by TCA Turkish Culinary Academy.

Accommodation

The students who don’t live in Ankara can choose the best dormitories available in the capital city and can get special discount for our school.
You can also get special discount from Inn 14 Hostel.

Training Duration / Class Hours & Days:

Practical training duration of Professional Sugar Art Pastry is 40 hours in total, where Advanced Sugar Art Pastry program is 50 hours in total and can be adjusted based on personal availability. For example; classes can be taken 2 days a week and 4 hours a day, lasting total of 5 weeks, students can take 4 hours a day, lasting any 10 days or 5 hours a day lasting any 8 days of their choice.
Classes can be taken one-on-one or in groups of maximum 5 students. There’s no fee difference between the one-on-one and group classes. The school management will decide how many participants will be in Sugar Art Pastry program.

 

Professional Boutique Bakery:

  • Week 1 (8 Hours)
    • Lesson 1: Cookie (Cookie making and decorating with sugar dough)
    • Lesson 2: Cupcake (Cupcake making and covering with sugar dough)
  • Week 2 (8 Hours)
    • Lesson 1: Cake making and covering (Sponge cake making, Pastry cream making, ganache making, covering with sugar dough, getting sharp edges)
  • Week 3 (8 Hours)
    • Lesson 1: Basic Human Figure (Body Ratio Study)
    • Lesson 2: Basic Human Figure (Body Ratio Study)
    • Lesson 3: Cartoon Character Figures (Mini & Mickey Mouse, Minions..etc)
  • Week 4 (8 Hours)
    • Lesson 1: Elementary Level Human Figure (Sitting Human)
    • Lesson 2: Cake Pop (Cake Pop making and covering with sugar dough)
  • Week 5 (8 Hours)
    • Lesson 1: Flower Modeling (Cherry blossom, orchid, magnolia, leaf cutting and drying technique)
    • Lesson 2: Flower Modeling (Painting Cherry blossom, orchid, magnolia leaves and making flowers)
    • Lesson 3: Cream Tart Cake
    • Lesson 4: Naked Cake

 

 

Advanced Boutique Bakery

  • Week 1 (8 Hours)
    • Lesson 1: Flower Modeling (Peony and rose leaf cutting and drying technique)
    • Lesson 2: Flower Modeling (Painting peony and rose leaves and making flowers)
  • Week 2 (8 Hours)
    • Lesson 1: Airbrushing technique
    • Lesson 2: Hand-painting technique
  • Week 3 (8 Hours)
    • Lesson 1: Making flowers using edible papers and painting them
    • Lesson 2: Animal Figures
  • Week 4 (8 Hours)
    • Lesson 1: Advanced Level Human Figures (Body ratio, face study, clothing study, detail body study)
    • Lesson 2: Advanced Level Human Figures (Body ratio, face study, clothing study, detail body study)
  • Week 5 (8 Hours)
    • Lesson 1: Royal icing decoration and piping techniques
    • Lesson 2: Butter Cream
  • Week 6 (10 Hours)
    • Lesson 1: Bust Making
